As plant-based meats continue to gain momentum with vegetarians. vegans and flexitarians alike, the desire for alternative protein deli slices has emerged. In a real-time stability test, plant-based deli slices colored with ConstantCrimson A showed no visible difference at 90 days.
Surimi sticks are recognizable by their vibrant outer coatings that draw consumers’ eyes. When compared to commonly used colorants in an accelerated shelf life test in the chiller cabinet, ConstantCrimson A’s stability added 30+ days. Maintaining a beautiful deep hue with minimal migration, the color change throughout 91 days showed it wasn’t until day 76 that ConstantCrimson showed a change visible to the eye. Strawberry-flavored milk drinks are a popular beverage amongst children, however, parents are concerned giving their kids foods and beverages with artificial colorants. In a survey that compared strawberry milk drinks colored with different sources, 96% of consumers said they would buy a flavored milk colored with ConstantCrimson A. Of the available choices, ConstantCrimson A scored the highest rating on naturality while also outperforming its artificial competitor across the most demanding processing and storage conditions associated with UHT beverages.
